The Wine

2002 Launois Pere et Fils Champagne Brut Blanc de Blanc, Cellar Selection
This stunning, highly quality-orientated, sixth generation family operation is based in the same famous village as Salon, namely Le Mesnil Sur Oger. This village is in the prestigious Côtes des Blancs area of champagne, where Chardonnay is king.

2001 Pavillion Blanc du Chateau Margaux, Bordeaux, Cellar Selection
Château Margaux was one of four wines to achieve Premier cru (first growth) status in the Bordeaux Classification of 1855. The estate is located in the commune of Margaux on the left bank of the Garonne estuary in the Médoc region. 30 acres are cultivated with Sauvignon blanc to make the dry white Pavillion Blanc which does not conform to the AOC Margaux appellation directives.

1998 Domaine Jean-Louis Chave Hermitage Blanc, Cellar Selection
Hermitage Blanc is considered to be one of the greatest whites in the world. This spectacular wine, normally a blend of 80% Marsanne and 20% Roussanne, exhibits layers of concentration, superb acidity and minerality, laser-like focus, and plenty of quince, white currant, citrus oil, honeysuckle, anise, white peach and apricot marmalade notes.

1997 Fattoria di Felsina Chianti Classico Riserva Rancia, Tuscany, Cellar Selection
This 100% Sangiovese from The Rancia vineyard takes its name from the historic Rancia estate, once a Benedictine monastery. Located in Castelnuovo Berardenga at elevations ranging between 400 and 420 meters with a fine southwest-facing exposure, the vineyard covers 6.25 hectares.

1996 Bodegas Muga Rioja Torre Muga, Cellar Selection
Bodegas Muga is considered the most traditional winery not only in Rioja, but in all of Spain. Arguably breaking tradition, Torre is considered an ultra-modern and extracted international style Rioja.  With powerful aromas of red and black cherries, as well as vanilla, cedar and mushroom notes, it should pair well with our flat iron steak. It is a blend of 75% Tempranillo, 15% Mazuelo and 10% Graciano.

2011 Kiona Chenin Blanc Ice Wine, Red Mountain Washington State
Red Mountain Chenin Blanc grapes are picked during a deep freeze in order to coax the concentrated juice needed for a dessert wine of this caliber. This involves monitoring vineyard temperatures deep into the night and picking at the right time to ensure optimal flavor and sugar extraction. An American made finish to an all American meal.
